This is my first official food blog post about clean-eating and I’m so glad you are even here! Please do not give up on it yet, considering the topic couldn’t be anymore boring: BEETS. I’m starting with beets because its something I started buying several years ago and noticed how much they made me feel amazing. Im serious. This ugly purple root-vegetable is a wonder.
I’m not even sure how I came to even *want* to buy beets. I must have read something about how great they are. Because I guarantee you I didn’t go buying them because I just love them. So, when first shopping for them, I had no clue what to look for or where to buy them. Organic or not? Well, of course organic because these suckers come straight from the dirt. You will find them in any grocery store, even the worst non-organic stores. Who knew? What you want to look for are these purple looking roots attached to green huge leaves. Ill try to add a picture later of the little suckers in the produce section, since I don’t have one today and I don’t know the rules yet of using other peoples pictures online. I can’t get thrown in jail on my first blog, right?
When you get home you will wonder how the heck can I fit these in the vegetable drawer in the fridge and I don’t have much advice, other than- good luck~ lol. The big gigantic leaves take up a lot of space. Apparently the leaves are edible, but I haven’t gone there yet. Sometimes I cut all those lovely greens off and just throw them out. Others may gasp at this. Anyway, now they are ready to sit in your fridge until the very last days of “I better cook these or Ive wasted my money”.
So, if you know how to steam beets, just ignore these directions. This is for my sweet girls and guys out there that were like me and just were a tad overwhelmed as to what to do with ugly purple bulbs covered in dirt. How do you make it edible? So, here goes. Its pretty simple- wash, steam, peel, store.
First, cut the stems, leaves everything off these and wash them the best your little hands can.
Funky Beets. I would have this funky beets joke for you that my husband always says, but of course I can’t remember it because I involuntarily start meditating when I hear any jokes from the 80s.
They aren’t cute, but this is how they go in my pot. And, Im sure you could steam in any contraction you have- crockpot, Insta-pot, probably even roast them. I haven’t tried that yet, but always an option.
I put them in a saucepan and fill the bottom until the water pretty much touches the bottom of the beets. I put a lid on it, and turn on medium high and steam them. It probably takes 30-45 minutes. See that fancy little silver holder in the pot? That is a steamer basket and will cost you like &7 at Bed bath and beyond. Im sure there is a better “adult way” to steam things. Im just stuck in this ancient steaming way. It gets the job done.
After they are done.. I rinse them and let them cool. Once done, there should be a tiny layer on the top that peels right off, leaving the inside nice and soft. Steamed beets. Eat those funky beets. Well, not yet. Unless you want to. I usually just store in the fridge and eat a few each day. Look at the steam coming off these beets.
I then slice them & then store them. You can now add them to smoothies each day, eat a few every day, or dice and throw on a salad. I haven’t talked much about the taste of them. Maybe because, shhhhh- I honestly don’t care for the taste. I don’t hate how they taste. But, I do all this work because I’m here to tell you- they are like the fountain of youth for you. I don’t like to take medicines and I can count on one hand at least how many times Ive had a headache, or just not feeling well…. and I swear- eat a few beets and within an hour- I could tell. Possibly in my head, but maybe not!
I haven’t even mentioned either what fun the red juice is after steaming- its what native Americas used for make-up because the juice is so red, so staining. You absolutely know I have used this red colored juice at the bottom of the pan to prank my boys around Halloween, or any good day, and pretend that some part of my body was bleeding. It is fun. Then, they want to do it every single time. So, be warned! Or, you can actually drink this steamed red juice and instantly take off a few years from your life.
